Avocado Toast With Egg

 INGREDIENTS :

  • Egg -1
  • Multigrain bread-1 slice
  • Avocado-1/2 (sliced)
  • Onion- 1 tsp (chopped)
  • Tamato-1 tsp (chopped)
  • Salt and pepper- to taste
  • Basil- a pinch
  • Coriander leaves- ½ tsp (chopped)

 METHOD :

  • Bring 250ml water in a pot to boil, when the water is boiling , turn off the heat and carefully crack the egg directly into water.
  • Cover the pot and poach for 5 minutes.
  • While the egg is cooking, toast the bread separately.
  • Mash avocados with tomato, onion salt and pepper in a bowl.
  • When the egg is done, use a spatula and lift the egg out of the water and place the poached egg on the tissue to remove water.
  • Apply the avocado spread on the toast, now place the poached egg, sprinkle with basil and garnish with coriander.
  • Serve immediately.
